in animal, vegetable, miracle she talks about only eating from their garden. but then she goes onto say that they made vietnamese salad rolls with rice paper wraps. so she must have been grocery shopping or she just happened to have 100 rice wrappers in her pantry (it could happen). we seriously dont go to the grocery store except for amaya's milk and some day that might change if we find a local cow or goat. that said, i dont like to waste and I have an entire cupboard full of neato asian cooking supplies, hence the previous dinner of sushi.

we have been trying to eat local and have been for a long time, but i still have some asian fixings in my fridge, freezer and cupboards so this is a kind-of-local exotic meal. everything from our garden or CSA basket except the sauces, rice noodles and egg roll wrappers. (dont expect me to be making those from scratch anytime soon, i have too much fruit to can to do crazy stuff like that)

Rolled the egg rolls with yucca banana flowers, noodles, sauces, fried onions and ginger, organic beef, garlic, mint and fried. served on a bed of mint, lettuce (from our one plant that keeps producing no matter how much you snip off) and fish sauce and rice wine vinegar (all from the pantry).

Noodle salad with new potatoes and spinach. Followed by baked beets with onions and hazelnuts and sesame vinegar dressing and the local radishes in sea salt.

My sister was looking to make an authentic Asian meal, she said her favorite non-traditional local market was on Prater Way in Sparks. They’re open from 9am-8pm, even on Sundays, so you can pick up some last minute supplies if you start cooking dinner and realize you’re missing something. The whole back of the market was filled with open-faced coolers, filled with a variety of fish and seafood items. You could buy raw or grilled Tilapia, which they were having a sale on the day we were in. There was also, what appeared to be a variety of fresh meats, hanging in the butcher’s area. While there were a lot of unfamiliar items, there were also some commonly found grocery items as well. I found bananas, cans of evaporated milk, and jars of French’s mustard. I thought it was interesting that in the Asian market they had quite a wide selection of authentic Mexican food also. -Lauren Randolph

Hugh Fearnley-Whittingstall, in his "Meat" book says that thickening stews using flour robs them of flavour and a pig's trotter does a similar thickening job and also adds more flavour. So here we are, then: my stew is about to come up to a simmer in preparation for three hours' slow cooking with a pig's trotter inside it. I'm pretty interested in how it's going to turn out and also very happy that we have an excellent local butcher that sells stuff like this.

The pig's head, simmering in a stock pot with assorted spices and some vegetables as well. Later, the meat will be removed and the stock (now rich with natural gelatin from the bones, skin, and connective tissue in the head) strained and reduced down to make headcheese.

I used to make cookies all the time. It was almost an obsessive habit; I would bring them to work and share them almost every weekend.

It started when I didn't have money to buy everyone at work little gifts and a co-worker - a lovely, dear man named Johnny Falvey - gave me $20.00 to make cookies for everyone. Little did he know it would grow and continue for years. And of course when Tony came to work with us at TP I was still making them and he loved them.

Then I stopped. Mostly because of money but also because of the deteriorating state of the work place. It went from a nice, decent place to work to a drug abuser's paradise and a sexual harassment suit (or 9) just waiting to happen. Drama-filled, angst- and hate-ridden hole.

However, Tony still wanted cookies. Batch after batch went by and they weren't any good. They were downright gross at times. Dry, burnt, uneven, hard, too old ingredients, etc. I couldn't find my recipe that everyone loved and that really sucked.

Finally yesterday I grabbed what I needed at the store. Last night, after watching The Freedom Writers (great movie, more proof that Hilary Swank has little to no talent as an actor whatsoever) I looked up a recipe online and threw caution to the wind.

YAY! Good cookies.

Thank goodness.

It's official. The book is off with the proofreader who will hopefully catch every missing comma, or wrong use of it's/its for me. There will be final composition changes, and then it gets sent to the printer who will make a few thousand of these so they can appear online and in stores on June 18th.

The only addition to this cover is the endorsement of Wendy McClure of Poundy, a Bust magazine columnist, writer of "I'm Not the New Me", The Amazing Mackerel Pudding Plan, and a forthcoming book where cast-iron actually may make an appearance. I read an article awhile back singing the praises of cooking with an Iron Skillet. They mentioned that you're really lucky if you can find a good used one because seasoning one is a chore. Well, for the last year or so this has been in my head when the other month I'm walking through my parent's garage and spot 5 of them stacked up on a shelf! Now, mind you, not once in my 27 years do I remember a single meal cooked with these...but feeding off my sudden enthusiasm for them, my Dad only begrudgingly let me bring home "the small one".
